Meringue cookies never use shortening and they come in a variety of flavors and ingredients:

MERINGUE COOKIES

1 egg white, beaten
1/2 tsp. salt
1 c. brown sugar
1 c. broken nutmeats

Beat 1 egg white with 1/2 teaspoon salt. Add gradually 1 cup brown sugar then 1 cup broken nutmeats. Drop by 1/2 teaspoon on baking sheet and bake at 325 until slightly brown.
OR
No shortening honey chewy honey cookies

you can substiture butter or margarin. I don't know any cookies that don't need some kind of fat in them to bind them together.
