While the religious leaders certainly knew who Jesus was, the Temple Guards probably did not.
Judas used the typical Middle Eastern greeting of a kiss on each cheek, which would've left no doubt in the mind of the Temple Guards who was to be arrested.

Well Jesus didn't broadcast via satellite so there were many who heard of Him but didnt recognize Him. Figure also that He looked just like anyone, and was with 11 men so Judas needed a way to point Him out, and for whatever reason, chose a kiss. Not very confusing as some before me would like to think.

Jesus is very popular and very unknown in His Ministry. His physical appearance is not different with His disciples, the difference is in His Spirit.
Therefore, Judas' kiss is necessary for people whose vision are veiled by the world's vanity.
The story of Judas and the story of Saint Paul are the warnings for people who interest in judging with their physical eyes: they know not that the devoted Judas will become a traitor; and the killer Saul will become a Saint. They better think and wait till the end.

Jesus had already said, "One of you will betray me." He knew there was heat on him and given the size of his entourage there was bound to be a rat in there somewhere. Maybe he was disguised, or maybe the cops needed a positive I.D. from their little informant, just to be sure. Sort of like a police lineup. Here are five men with brown eyes, beards and robes. Which one is Jesus? Judas couldn't exactly point, right?

The temple guards didn't know who Jesus was,
so he (Judas) said ''The man I kiss is the Messiah.'' And then he kissed Jesus. This also
could have helped if the guards didn't know what Jesus looked like.

the soldiers just wanted verification (i.e. like a witness saying this person was the one doing the preaching), plus it was written that that would happen, but a kiss was recognition in those times, and families kissed and the apostles were family (in a way, like brothers).
Why would the soldiers want someone to point out a preacher? Because there were so many false prophets at that time and the state wanted to be their only religion, the only one for people to cow tow to, so they were ridding the area of all what they called false prophets.

It was dark and there would be several people in the garden. Judas wanted to be sure that he pointed out the right person. He also wanted to be quite sure that he earned his pay. As Jesus pointed out, there was no need to stoop to this level. He had moved openly among the people and could have been arrested in broad daylight.

Jesus was in every way common looking. There was nothing to distinguish Him from any of the others. No, the Temple guards would not have necessarily recognized Him. Remember, they may have heard of Him but never seen Him. The only reason we recognize G.W. Bush is because of photos, which they didn't have then.

It is easy for us, who live in a world of instant news, internet and TV to think every one knew Jesus. Yes, there were a lot of people who heard him preach, were fed by Him or healed by Him. But the TEMPLE guards were restricted by their duty and were not always around with the "crowds". There had to be no mistake who Jesus was, especially in the dark and perhaps surrounded by his disciples. So, the aid of Judas was enlisted.

Obviously many knew him through his deeds Not by his appearance there was no T.V. or Newspapers and cameras. You would not have recognized the President today if you had none of these except someone pointed him out to you or you had seen him in person.
