Angostura bitters, you put a small amount in the bottom of the glass, swill it round, it is optional to tip the excess out or not, then add the gin

As the others said Angostura aromatic bitters. Its got a really nice spicey taste an smell.

Try it with vodka and ginger ale its lovley...
