Use Vanilla BEANS.
-- Cut one open, scrape the seeds out to use in something else, then put the bean in the POT when you start to brew. As soon as it's finished brewing, take the bean out. If you let it dry, you can reuse vanilla beans several times.
-- If you use vanilla extract, make sure it's REAL, not artificial -- and NOT the Mexican vanilla extract.
-- Most extracts use alcohol as a preservative, which is one reason they taste funny. There are a few non-alcoholic extracts, tho' you might have to go to a natural/organic grocer to find them.
-- Also, a little vanilla goes a long way. Just 1 or 2 teaspoons is all it takes for a whole batch of cookies, so just a few drops for a pot of coffee.
You could also try fruit juices or concentrates, although they may add a bit of sugar (fructose). Check the label to make sure they don't have corn syrup or other sugars added.

Scrape the vanilla bean into your coffee. Add an Orange peel or lemon peel. The oils in the peal will release into the coffee. I'm reluctant to say use baking extracts as Ihave before and they make the coffee taste wierd. But there are coffee flavor liquids you can buy, which have very little sugar and only one drop or two is needed. Costplus sells them, but I can't remember the name, cuz it's in storage!! Cinnomin sticks- for a nice cafe vienna. I think the trick is to go back to basics and experiment. Although, I have tried all the above and love it!! Infact the orange peal is also nice in some hot water too!

If you have a local or on-line source for coffee that has the flavors you want you can buy a bag of the flavored coffee and a bag of the regular coffee then mix a few beans of the flavored coffee Experiment until you get the right combo of coffee flavor and the flavor you added. Be careful though,your grinder needs to be cleaned really good after using flavors in it or the flavor will linger for a few pots of regular coffee.

I have found that most every "flavoring" has sugar in it, or some sugar substitute which taste horrible, and so what I found to do is to drink stronger coffee such that the sweetening taste is much less in proportion to the coffee taste. I used to drink Starbuck's coffee, their Italian Roast coffee, until I discovered that they refused to support our boys in Iraq, etc., by sending them any coffee other than what they could make a profit on, so, I dropped them, since my son was one of the soldiers they refused to support. But many coffee companies have French Roast coffee, and if you have it ground, or grind it yourself, very fine, and slow drip it, you can have such strong tasting coffee that you'll BEG for a sweetener of some sort. A lot of the coffee companies label their stronger coffees "Dark Roast" or "Espresso" and so you can choose from them and enjoy the trial and error method of choosing the coffee you most prefer. My wife used to "flavor" my coffee in a myriad of ways, but they always were sweeteners of one sort or another. Right now she uses Hill Brothers Cappucino powders in a can, one flavored and named English Toffee, and the other Chocolate Mint. She is real good in putting "just a smidgen" of the flavoring in the coffee she makes me, and it leaves a great strong coffee taste to it. She used to own a restaurant in the local mall, and she does cooking and coffee making so well, I was glad to let her continue here at home as she wished. I have brought a new challenge to her coffee making, however, and she has "risen-to-the-occasion" very fast and very good. I wish you the best. Have a great cup of coffee. God Bless you.

Get your self some coffee grounds with the flavor already in them. They come in very small packs, about half a cup. Incase you don't like the flavor then you haven't spent that much money. They have them at the groc. store. Ask someone who works there he will probably show you.

Place a Cinnamon stick in the filter with the grounds while brewing. This adds a nice flavor.

You can put some ground cinnamon into the coffe grinds before you brew, or add it straight to the coffee before you drink it. Nutmeg is also delicious.
