Can I change back to IE 6 or is does anyone know of a software I could run to fix my problem?

To uninstall Internet Explorer 7 to return to Internet Explorer 6 on Windows XP

Click "Start," and then click "Control Panel."
Click "Add or Remove Programs."
Check "Show Updates" at the top of the dialog box.
Scroll down the list and highlight the version of Internet Explorer 7 that you are running, and then click "Change/Remove."
Uninstall that,restart your PC and you are on IE6

With such a major upgrade I would do a disk defrag.

If the Menu Bar is what you don't like about IE7 try this tweak.

To go back to IE6 just uninstall IE7.

try running a disk defragment, my pc has been slow 2 and i have a amd chip set. But what i would do is run disk defragment to delete useless files taking up space. your ram can affect how you computer functions as well if you have a 512 you might want to bump that up to a gig. hopes this help.
