I like split pea with ham soup. How about you? What do you like and how to you prepare it. Please share your ideas. Lord have mercy I have buckets of left over ham! Yikes!

I ended up with a huge amount of really good ham one year, was making ham sandwiches and realized I didn't have any lettuce or tomato so I used sliced ripe pears instead...this turned out so well it's been an after holiday staple ever since.
Toast whatever high quality bread you're using (I like some of our local microbakery sourdoughs with things like dill and cheese, garlic & rosemary, etc.) but anything is ok - some mayonaise, a little dijon or hot honey mustard, thinly sliced ripe pears or apples. Once I put mango salsa on it. Yum.

I also used to make several different types of ham & bean soups, these can be made up as you go along - but I highly recommend a boullion paste product called better than boullion, they have a ham flavor. If you have way too much to use now, cut some into into bite sized pieces and put it in ziplocks in quantities suitable for future soups.

I didn't cook and for once didn't end up bringing home a carcass or bunch of leftovers from my family's bash last night...I usually spend Christmas making soup while I work on my projects...I miss my soup! Hm...time to go raid the fridge and see what soup fixins I have on hand...

Well you already answered it..he he..Split pea soup is terrific..especially on a cold winter day. And put loads of carrots and celery in it to! The other ham recipe i have is ham/potato casserole. OH and also i am from the south and we make a breakfast dish using ham and coffee (yes coffee). It is called "red-eye gravy" where you simmer the ham in a skillet and add coffee to the drippings. Then it is poured over the ham and grits. Have to be southern to appreciate i guess.

I'm still looking for the recipe, but I know I've made a ham/broccoli/cheese/potato casserole before, and it has cream of something soup in it.

I should start going through the old church cookbooks I have.

Scalloped potatoes

SCALLOPED POTATOES
3 tablespoons butter
1 small onion, minced
3 tablespoons all-purpose flour
1 cup of ham peices
1 teaspoon salt
1 1/2 cups milk
1/4 pound sharp cheddar cheese, shredded
5 medium potato, peeled and sliced
1/4 teaspoon paprika
Preheat oven to 375 F. In 2-quart saucepan over medium heat, in hot butter, cook onion until tender, about 5 minutes. Stir in flour and salt until blended; cook 1 minute. Gradually stir in milk and cook, stirring constantly, until mixture thickens slightly. Remove saucepan from hear; stir in 1/4 cup shredded cheese. In shallow 2-quart casserole, arrange half of the potato slices and ham; pour half of the sauce on top; sprinkle with half of remaining cheese; repeat. Sprinkle with paprika. Bake, covered 45 minutes. Uncover and bake 15 minutes longer or until potatoes are tender. Makes 6 accompaniment servings.
