Umkay, first, if you are DEthawing somethign you are freezing it!! Thawing is unfreezing. It probably has freezer burn.

pretty much all frozen hamburger comes out like that the dyed water (there is NO blood in hamburger, dispite what you may be told...it is banned by FDA) has migrated to the center of the mass if this is room temp defrost...micro wave, it's possibly cooked to...by feeling the texture, anyone can tell the difference between raw discoloration and cooked hamburger.
The meat is just fine.

It is a result of the freezing, the blood in the meat went to the center and away from the freezing first. It won't taste as good as none frozen meat, but should be good enough if good well.

You probably won't die but, yes, that's a sign of spoilage. When in doubt, throw it out!!!
If you cook it, it's going to have a sour smell and an off taste to it, anyway.
A solid slab of meat has one surface to collect bacteria- the outside. Ground meat has thousands and that is why it spoils so quickly. For $5...it isn't worth it. Just toss it.

did you dethaw the meat in the microwave?
if so, the grayish part is only cooked meat. the inside is still raw.
you may eat your meat!

Its safe to eat, but I wouldn't eat it... I like my food to look a certain way before I eat it. Cook it up and give to the dog for a nice snack. Dogs and Cats love hamburger

if you de-frosted it in the nuke machine, you probably started to cook it a little.....it's okay....eat hearty....good luck
