I already know the answer to the question itself but I'm curious to know if everyone else know how the Bible itself was made and who made decide on the matter what should and what should not be in the Bible.

When was the canon of Scripture established? When I say established, I mean when was the books of the Bible put together and held to be inspired word of God, and who had the authority to made the Bible as it is today?

All of it. Both Old Testament and New Testment.

You are correct the the Catholic Church gave us the Bible since their were no Protestants or Orthodox in those days.

which one?

first you have the Pentateuch canonized and closed.

Then came the Prophets.

Then the Hebrew Bible was canonized about 200BC.

Then you have the Septuagint around the same time.

Then the Catholic bible in 325.

Then it was modified by the Orthodox Church.

And the Catholic bible was modified by Protestants a few times.

Okay so really, since you said "canon" I'm guessing you mean the Catholic bible? The Synods of Hippo, 393 A.D., and Carthage, 397 A.D., and later, 419 A.D., (along with the Traditional Bible or Latin Vulgate (LV), 406 A.D., by Saint Jerome) gave us the canon of Sacred Scripture, as Catholics know it today.
