yes you should. I also cover them with a wet wash cloth if I have too many potatoes to cover them completely with cold water I also don't add salt because you are going to change the water and resalt them before cooking them. Or like everyone else said yes u can precook them and reheat them, but you will need to add some more milk not alot when reheating them.

I'd go ahead and cook and prepare the mashed potatos then microwave them when you want to eat. I've still had them turn brown or pink in water. And cooking them ahead will save time when you need it most.

Let them cool and refrigerate them. Reheat in boiling water then mash.
