What are you going to cook? If it is meat, just use a meat thermometer. It will be quite a bit longer. Just keep checking.

Why do you "want" to cook at 250? Why can't you follow the recipe?
250 is too low to caramelize the surface of whatever you're cooking, (especially a protein), and thus will reduce flavor development.

Ultimately it depends on the size of what your are cooking and what you are cooking.
Assuming it's meat, figure about 20 minutes per pound. I would however heat the oven to about 425 and put the meat in, then turn the oven down.
I admit I do have some safety concerns and would be very careful.

Why do you want to cook at 250? Cooking longer at lower temps will dry out whatever you're making. It also depends on what you're cooking, if its raw meat be careful.

Depends on what you are cooking. I would have to say two hours...maybe more. Just make sure that your dish is completely cooked before taking it out of the oven. Try poking it with a fork.

not a good idea unless you are cooking a brisket or roast. Temp isn't just for cooking it also brings foods up to safe temp to prevent bacterial growth.
