Although there is no "best" here - it depends on what you like, keep in mind that platform beds tend to be higher than normal bed frames, and you usually don't use a box spring with your mattress, because it would be too high. Box springs add "give" to a mattress, so you'd want to look for ones that don't require a box spring. Consider foam mattresses (either go to a foam shop and have one cut to size, or look at the more expensive alternative - the "memory foam" mattresses you get in better mattress shops), mattresses with adjustable air chambers (the "sleep number" brand is one), or water beds. I recommend before buying any of them, you try them out for yourself and see what feels best to you.

What size mattress is it built for? "Platform bed" is a reference to the style of the frame. So, for instance, my platform bed, which is made to hold a futon mattress, will not hold a king, and a twin looks a bit goofy on it. It's essentially a large, low table for a mattress. What kind of mattress you put on it is entirely a matter of comfort. If the dimensions of your bed are those of a queen sized mattress, then a queen sized mattress is what you use. Whether or not you choose to use a box spring under that mattress is a matter of comfort and personal taste. The most common type of platform bed is a single mattress on top of the frame. However, that is not very comfortable to many people. My platform bed has 2 futon mattress's on it. That was the compromise I chose to go with when I was looking at the aesthetics's -vs- comfort issue. The platform bed that inspired me to build mine has a king size box spring and mattress. So, yes... a pillow top will work. With or without box springs. It just may not look precisely like a standard platform bed. The question is "Whats more important to you; comfort or looks?"
