I lost the recipe I had and I bought things like almond extract ... cream cheese, cherry filling, and wafers... it is not the ameretto recipe

well if you have little baking tins (muffin tins) here is an easy recipe.

2 packages cream cheese (8 ounces each)
1/2 cup of sugar
1 teaspoon of vanilla
2 eggs
vanilla wafers
can of cherries


Make sure the cream cheese is really soft if you dont have an electric mixer (from experience, takes forever to mix). Mix the cream cheese, eggs, vanilla, and sugar into a bowl. Next, take the vanilla wafers and put one wafer in the bottom of each muffin tin (cupcake tin, whatever you call them). Next pour the batter over the wafers. Put in oven on 350 for about 12-15 minutes or until you can cut them and they are not mushy or watery. After taking them out of the oven let them cool for about 10 minutes and then put the cherries on top. Then enjoy! :)

Cherry Cheesecake
Ingredients
1 1/2 cups finely crushed vanilla waffers
6 tablespoons melted butter
one 8 once package cream-cheese, soften
1cup confectioner’s sugar
one 8-ounce container Cool Whip
one 21-ounce can Com-stock Red Ruby cherry pie filling

Directions
Preheat the oven to 325 degrees.



Combine the vanilla wafers with the melted butter. Mix well. Place the mixture into a 9-inch pie plate. Press firmly into the bottom and up the sides of the plate. Place crust in preheated oven and bake for 8 minutes. Cool.



Combine the cream cheese with the confectioner’s sugar and mix until smooth. Fold in the Cool Whip. Pour the mixture into the crust and spread evenly. Chill for about an hour.

Spread with the cherry pie filling and chill until ready to eat. Makes 6 to 8 servings.

Optional graham cracker crust:

Ingredients
1-1/2 cups graham cracker crumbs
2 tablespoons granulated sugar
6 tablespoons butter (preferably unsalted), melted


Preparation
Preheat oven to 350° F. Combine all of the ingredients in a medium bowl. Press into the bottom and sides of a 9-inch pie plate. Bake until set and golden, about 8 minutes. Cool completely on a wire rack.

Cherry Cheesecake Pie

INGREDIENTS:
2 eggs
1/2 cup sugar
2 teaspoons vanilla extract
1 1/2 cups sour cream
2 packages (8 ounces each) cream cheese, softened and cut in pieces
2 tablespoons melted butter
vanilla wafer crumb crust
1 can (21 ounces) cherry pie filling

Vanilla Wafer Crust:
1 cup vanilla wafer crumbs
1/2 cup sugar
1/4 cup melted butter
PREPARATION:
Directions for cherry cheesecake pie
Combine Vanilla Wafer Crumb Crust ingredients. Press into a 9-inch pie pan. Bake at 400° for 6 minutes. Cool before filling.
Prepare cheesecake pie filling.

Beat together eggs, sugar, vanilla, and sour cream. Gradually add cream cheese, beating well. Beat in melted butter. Pour cheese mixture into 9-inch prepared and baked wafer crust. Bake cherry cheesecake pie at 325° for 35 minutes, or until set in center. Will firm up as it cools. Top with cherry pie filling; chill cherry cheesecake pie thoroughly before serving.

Just make one up, use 2 eggs, 1/2 cup sugar, and a dash of salt per each package of cream cheese, and then enough of your favorite flavoring to make it taste how you want (do not exceed more then a couple of tablespoons)

Then use 6 tablespoons butter, 2 tablespoons of sugar to each 1-1/2 cup of cookie crumbs.

Be creative. Cheesecake is highly versatile if you keep the basic proportions correct.

oh, my! that sounds delicious!
graham cracker crust, vanilla pudding and cream cheese, vanilla wafers, cherry filling topped with chocolate and raspberries and mounds of whipped cream...
sound like a recipe for diabetes or extree-e-e-e-em sugar shock.
but ooooohhhh! what a ride!
