The simple fact that you cannot break through their inability to see ANYTHING from a differing point of view... No matter how much I try to explain it to them, they never seem to fully be able to look at something with an open mind.

I'd say the beginning of the conversation is the toughest part. Not all Theists conceive of a divine in the same way, and not all Atheists take the same stance either; some are more empirical than others, and the fact that Buddhism can be seen as atheistic really enlarges the position any given Atheist might be speaking from. So, getting the sides to agree on terminology is tricky, and often they end up talking past one another. I, for instance, have a belief structure that can be reconciled with (some forms of) theism and with atheism. How long do you think that takes to explain?

The most difficult part of an atheist's doctrine is convincing a theist of it's veracity. Your belief's (or lack thereof) are simply your beliefs. They don't require causing one to believe in the truth of something; they simply exist within the context of your being.
My atheist friends don't try to convert me to atheism. We just accept each other for who we are and interact at our levels of commonality. Having had several toe-to-toe discussions involving both sides of the theology issue there is one truism to be gleaned:
We are who we are for reasons of our own. You cannot force your beliefs on another because beliefs emanate from within that which controls your thoughts.
I used to be a an atheist. I used to be a card carrying Southern Baptist Bible thumper ... until I had the distinct misfortune of working at the Baptist Medical Center where I learned the true hypocrisy of their motto "take care of him and I will REPAY thee".
Now, I just live and let live and you can feel as you do and I'll do the same.
Some of us simply plant seeds without feeling the need of being this brow beating religious despot espousing hell fire and damnation. If you have to convince somebody that you believe a certain way then you're not living your conviction too persuasively.

Are you trying to covince people of the rationality or the rectitude of your beliefs? The difficulty is usually getting past the facade of "I believe, therefore I don't need to explain or reason". Almost everybody has a weak point in their beliefs but if they want they can just spackle it over with more baseless belief and voila, imperviousness again. To you and me it might be funny that somebody buys, say, The Bible from beginning to end but a believer will see no humor in it.
Bear in mind, too, that in the west we love to conflate family with religion. A certain amount of family together time as children is spent on behalf of a religion and it gets to be in a child's mind that we imagine that that time together would not happen if we didn't follow the family religion (when in fact, atheist families have the same amount of together time). It's just one more anti-atheist myth you have to fight.

But people are idiots. They claim science is invalid when it clashes with their beliefs (like somebody might have done hundreds of years ago if you discussed meteorology and explained there's no god of wind or storms) and even claim it's impossible not to believe in god. Most people are stupid. And that's fine - as long as they don't hurt us by trying to limit us the same way they're limiting themselves, or declaring a war on science or free speech or whatever the cause of the month is.

To me, the most diffucult part is trying to make them see from a different point of view. Most theists are so closed and narrow minded that its impossible for them to see anything from another point of view.
I will chat about religion, but I dont try to convince them that my views are correct (but the theists usually do try convincing me that their views are correct), frankly, it's like talking to a child with their hands over ears

I don't try to convince anyone of my beliefs. My truest belief is everyone should be able to believe what they want as long as it doesn't cause harms to others.
When a person is born and raised in traditions of religion it is nearly impossible to sway their beliefs unless they are open to other options. I have found the fastest way to start a big argument is to discuss religion and beliefs or lack there of.

If you are not gay, married to a man and very much in love with him, then what could I say to you to get you (as a woman) to start being attractive to other women instead of men? It is the same problem with most christians. There is nothing you can say to change their mind.

Willful ignorance. The deliberate shielding of rationalization and ignorance aginst fact and education. It is frequently like trying to talk to someone who has stuck their fingers in their ears and yell "I CAN'T HEAR YOU!"
Faith trumps everything for a theist, to the point of near-delusion. Even reality. Point out something contradictory in their holy book and they'll tell you you're "reading it wrong"...as if there aren't dozens of ways to interpet their book. Point out how facts contradict their stories and they wave the facts away. Point out how thier arguments have been long-debunked and they will continue to use them after they're done talking with you. Point out the total lack of evidnce for their chosen deity and they will demand "proof of its NON-existence"...as if you need proof of non-existence before you disbelieve in dragons, unicorns, and fae folk.
Circular reasoning, denial, and outright willful ignorance are near-impossible to break through. That's the most difficult part.

Does God exist? If so, why can't atheists find Him?
Many Christians were once atheists. In fact, you could visit almost any Christian church and find members of the congregation who formerly did not believe in God. So it is not true to say that atheists cannot find God, because countless numbers have found Him.
But the Bible gives a reason why many atheists don’t find God. It says:
“But without faith it is impossible to please him: for he that cometh to God must believe that he is, and that he is a rewarder of them that diligently seek him” (Hebrews 11:6).
This shows that the reason many atheists never find God is because they never honestly look for Him. Christians who have been spiritually born-again know that God does reward those who seek Him — but not those who don't seek Him or those who don't care.
God's astounding promise
That astounding Bible promise in Hebrews 11:6, that God rewards those who diligently seek Him, has been proved by millions. But the first step — to come to God having faith that He exists — is the one most atheists never take. They say there is no God, yet they do not take even the first step to find Him.
People who scoffingly refuse to believe that God exists are like the old man who kept saying no one could ever reach the top of Sky Mountain. Mountain climbers passed the old man’s cottage near the base of the mountain every day and said they had climbed to the top of the mountain. He refused to believe them, so never took that first step to find out it was true.
It is probably fair to say that most born-again Christians wonder whether atheists have a screw loose in their brains. To Christians who have received God's Holy Spirit in their lives, and know how real this is, the atheist's claim that God doesn't exist seems like childish rebellion.
An atheist who tells a Christian there is no God might as well say the Chrtistian has no body. The Christian just thinks it is a ridiculous thing to say.
Depending on how an atheist announces his or her unbelief, the Christian will either feel pity for the atheist, or wonder how to get the atheist's intelligence and logic up to scratch.
“I don’t believe it if I don’t see it!”
An atheist once said in a debate that he could never believe in anything that he could not see, taste, hear, smell, or touch. His opponent asked him how he knew he had a brain, if he had never seen, tasted, heard, smelled, or touched it.
The atheist replied that even though he had never seen, tasted, heard, smelled, or touched his brain, the fact that brain experts had always found a brain in everyone they examined meant that he too probably had a brain. But he admitted that on this line of reasoning it was possible he may or may not have a brain, just as there may or may not be a God.
Amazing progress
His opponent pointed out that there had been some progress, because now that the atheist had admitted there could be a God he was no longer an atheist, but an agnostic (someone who doesn’t know whether God exists or not).
And this really is the best that scoffers can come up with. To know that God doesn’t exist means you would have to know everything, because if there is any information you don’t know, God could be among that. You would also have to be everywhere at the same time, because if you were not, God might be somewhere you were not.
Why will some atheists never find God, even though God has promised to reward them if they diligently seek Him in faith? Because they never honestly look. Christians need to help them to see the wonderful truth of Hebrews 11:6, not look down on them.

actually atheist are nice only they choose other side because they don't know what we know;what we feel or what we have!
some atheist believe in Darwin's theory but some not!actually people convert to a religion or out from their religion only because society around them!it's hard to find someone WHO was find it's self by searching and even it make whole of her life!
