Depends on the kind of bread you want to make. In general, you'll need some kind of flour, yeast, sugar, salt, and warm water. Depending on the recipe, you may need other ingredients as well. Are you wanting to make sourdough bread? I ask because that type of bread takes a lot longer to make. If you don't already have a sourdough starter, you have to make one and that step can take a few days. For a regular yeast-risen bread, you allow the bread dough to rise by letting the dough stand in a warm place for a while, usually until doubled in size.. The time depends on the recipe. If you aren't using a bread machine, you'll want to have a heavy-duty mixer, preferably with dough hooks.
Not all breads are yeast-risen, though. There are many wonderful breads that use all-purpose or self-rising flour. These use baking powder and other leavening (rising) agents instead of yeast and are often quicker to make. Many breads don't even use wheat flour-- like some cornbreads.
You don't need a bread machine to make great breads! Our grandparents didn't have bread machines, yet they made bread. You can do the same. Check the link below for some great bread recipes!

Here is a recipe you can half or third:
Fabulous Homemade Bread
Best Homemade Bread - 6 loaves in less than 3 hours! This is a variation of my mother Elaine's recipe. She is 75, and still makes hers by hand. I cheat and use a Bosch mixer, that's my time saver.
Recipe Source Author: J. Drury Source: Allrecipes
1/2 cup warm water
3 (.25 ounce) packages active dry yeast
1/4 cup bread flour
1 Tbs white sugar
2 cups quick cooking oats
2 cups whole wheat flour
4 1/2 cups warm water
1 1/2 Tbs salt
2/3 cup brown sugar
2/3 cup vegetable oil
10 cups bread flour
1 In the mixing bowl of an electric mixer, stir together 1/2 cup warm water, 1 tablespoon sugar, 1/4 cup bread flour, and yeast. Let grow for about 5 minutes. It will bubble almost immediately.
2 Measure oats, 4 1/2 cups warm water, whole wheat flour, salt, 2/3 cup sugar, and 2/3 cup oil into the mixing bowl. Mix on low speed with a dough hook for 1 to 2 minutes. Increase speed slightly, and begin adding bread flour 1/2 to 1 cup at a time until dough pulls away from sides of bowl. Humidity determines how much flour you need before the bread pulls away from the edge of the bowl. It is normal for the dough to be sticky.
3 Place dough in an oiled bowl, and turn to coat the surface. Cover with a damp cloth. Let rise in a warm spot for 1 hour, or until doubled in size.
4 Divide dough into 6 pieces. Shape loaves, and place in greased 8 x 4 inch pans. Let rise until dough is 1 inch above rim of pans, usually 1 hour.
5 Bake at 350 degrees F ( 175 degrees C) for 35 minutes, or until tops are browned. Let cool in pans for 10 minutes, and then turn out onto wire racks to cool completely.
Servings: 72
Yield: 6 loaves

Basic White Bread
3 cups flour, more or less, divided
1 tablespoon sugar
1 1/4 teaspoons salt
1/2 envelope active dry yeast
1 cups very warm water, about 120°
1 tablespoons softened butter
In a large mixing bowl combine1 1/2 cups flour, sugar, salt, and yeast. Beating at low speed, add the water and butter. Continue beating at high speed for 3 minutes. Add 1/2 cup flour and beat 4 minutes longer. Stir in remaining flour, or enough to make a soft dough. Turn out onto a lightly floured surface. Knead for about 8 to 10 minutes,, or until dough is smooth and elastic, adding a little more flour as necessary.
Place dough in a large buttered bowl, turning to butter top. Cover with a clean towel and let rise for about 1 hour in a warm place, free of drafts. Punch dough down; knead until smooth. Cut dough in half, cover with the mixing bowl, and let stand for 15 minutes longer. Roll out dough into a 12x9-inch rectangle. Starting with the narrow edge, roll up, turning ends under to make loaves to fit pan. Place rolls seam side down in greased loaf pan, 9x5x3-inches. Cover pans with clean towel and let rise in warm place until double, about 45 minutes. Bake loaf at 400° for 25 to 30 minutes, or until loaves sound hollow when tapped with fingers. Remove from pans to racks; brush with butter for a soft, more flavorful crust, if desired.
