Good old Southern Pecan Pie is fabulous. Or a nice Key Lime Pie.Of course New York Cheesecake always does the job. But my absolute favorite is Coconut Cream Pie.

Millionaire Pie
Ingredients:
1 pk Whipped topping mix
1 cn (14-oz) crushed pineapple;
-with juice
18 oz Cream cheese
1 c Sifted powdered sugar
1/2 c Chopped nuts
1/2 c Coconut
1 ts Vanilla
1 Baked pie shell
Instructions:
Prepare whipped topping mix according to directions on package & set aside.
Blend pineapple & cream cheese. Mix in other ingredients & add whipped
topping last. Pour into baked 9-inch pie shell & chill 2 hours or
overnight. Spread additional coconut on top, if desired.

A good pie for christmas....
If you are looking for the festive, cosy sort of atmosphere, around the fireplace, I recomend that you have a selection of mince pies and wash that all down with some mulled wine. But if you don't like mulled wine, you can have anything.
If you are having a professional party (or just want to impress the relatives,) Apple pie, or a pie with fruit in it of some sort, is a must. Wash it down with something cool, and complimentry.
Or, if you are the suger-munching addicted type, i recomend chocolate pie. Mmm yummy. Hot choclate always does the trick with that one. Especially with the little marshmallows floating in the middle... MMM

I think Pumpkin Pie is a good one
1 1/4 cups pumpkin puree, canned or fresh
3/4 cup sugar
1/2 teaspoon salt
1/4 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon all-purpose flour
2 eggs, lightly beaten
1 cup evaporated milk, undiluted
2 tablespoons water
1/2 teaspoon vanilla extract
1 unbaked pastry shell (9-inch)
PREPARATION:
Combine pumpkin, sugar, salt, spices, and flour in a medium mixing bowl. Add eggs; mix well. Add evaporated milk, water, and vanilla; mix well. Pour into pastry-lined pie pan. Bake at 400° for 15 minutes; reduce heat to 350° and bake about 35 minutes longer, or until centre is set.

Apple-Cranberry Crumb Pie :
For topping
1 cup all purpose flour
1/2 cup (packed) golden brown sugar
1/3 cup old-fashioned oats
3/4 tsp ground cinnamon
1/2 cup (1 stick) chilled unsalted butter, cut into small pieces
For filling
4 large Granny Smith apples, peeled, cored, cut into 3/4-inch pieces (about 5 cups)
1 16-ounce can whole-berry cranberry sauce
3/4 cup sugar
1 tsp cornstarch
1 9-inch deep-dish pie shell
1 Make topping:
2 Mix first 4 ingredients in medium bowl. Add butter; rub in with fingertips until mixture resembles coarse meal. Set aside.
3 Make filling:
4 Place baking sheet in oven and preheat to 350°F. Toss apples, cranberry sauce, sugar and cornstarch in large bowl until well blended.
5 Transfer apple-cranberry filling to frozen pie shell, mounding in center. Sprinkle topping over pie. Set pie on baking sheet in oven. Bake until apples are tender, juices bubble thickly and crust is golden, about 1 hour 10 minutes. Transfer to rack. Cool 15 minutes. Serve warm with vanilla ice cream.

Granny Smith Pie
9" baked pie shell
4 Granny Smith Apples
1 can (1 lb. 4 oz.) crushed pineapple
2 eggs
1 1/2 T. cornstarch
1/2 c. sugar, divided
1/8 tsp. salt
Preheat oven to 325F. Pare, core and cut apples into thin slices. Drain pineapple, measuring out and reserving 1 c. syrup. Separate the egg yolks and whites. Make a smooth paste of cornstarch and 1/4 c. of the syrup. Stir syrup into egg yolks.
Over low heat, cook remaining 3/4 c. syrup, 1/4 c. sugar, salt and apple slices for about 5 minutes. Drain, saving syrup, and set apples aside. Pour a thin stream of hot syrup into cornstarch mixture, stirring vigorously. Pour mixture back into saucepan. Cook, stirring constantly, until it boils. Remove from heat; add apple slices and drained pineapple. Cool slightly.
Beat egg whites until they hold a soft shape. Gradually add in remaining sugar and continue beating until whites hold a soft shape. Spoon apple filling into pie shell and cover with meringue. Bake 10-15 minutes, or until meringue is golden. Serve cold.

scottish shepards pie!!! here is my moms award winning recipe.
INGREDIENTS
1 pound cooked ham, cut into one inch cubes
2 (14.75 ounce) cans creamed corn
7 potatoes - peeled, boiled and mashed
1/4 cup butter
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place ham in a 2 quart casserole dish and top with corn. Heat in preheated oven 10 minutes. Remove and top with mashed potatoes. Heat in oven for 20 more minutes, then remove.
Turn oven to "broil" setting. Dot potatoes with butter or margarine, then place pie under broiler just until golden brown on top, about 3 minutes. Serve immediately.
