Devils on Horseback
This is an interesting starter. See also Angels on Horseback. Devil's on Horseback is a lot cheaper to make.
Ingredients

Serves: 6

24 Prunes, soaked in boiling water for at least 30 minutes
4 tbsp Mango chutney
12 Streaky bacon rashers, rinded
12 small slices Toast
Butter
1 Bunch Watercress


Method

Pre-heat oven to 200 °C / 400 °F / Gas 6.

De-stone the prunes. Stuff each prune with 1/2 tsp mango chutney. Stretch the bacon so that it doesn't shrink when it's cooked. Use the back of a knife. Cut each rasher in half.

Wrap a piece of bacon round each prune. Place on a baking sheet. Keep them packed up tight so that they don't unravel. Bake for about 8 minutes. Butter the toast. Arrange 2 devils on each piece and garnish the dish with the watercress.

I was told they are horrible large shiny black beetles - similar to cockroaches. Ah, now that is called a devils coachman.

Prunes soaked in something nice, wrapped in pancetta or black forest ham and baked in oven until crispy. Add some chilli or hot mango chutney to make it devilled.

Depending on the recipe, it's either dates or prunes wrapped in bacon. Angels on horseback are usually oysters wrapped in bacon.
