If you are simply tasting the wines to evaluate them, the best basic procedure would be to use a clean glass for each. Use the swish and spit method and take a sip of water between wines. Start with the whites and move from dry to medium to sweet. Then do the same with the reds.
If however, you want to actually enjoy the wines and will be moving between reds and whites, then try having a sip of water and chew a small piece of white bread between different wines.
It's difficult to move from a red to a white, and not have a residual taste, but that should help.
I'd stay away from cheese as a palate cleanser; cheese is fantastic to enjoy with wine, but no matter how mild the cheese the odds are it will affect your tasting experience.

I work in a Fine Wine and Spirits Shop and frequently have to go to industry tastings and and taste wines for purchase.
If you are doing a research tasting.
NO SWALLOWING.
Never go from red to white.
White before red.
Dry before sweet.
Just water between wines, cleansing the palate is a myth. Instead you should prime your palate,swirl a small sip of the wine being tasted in your mouth spit then take a largish sip swirl and 'chew' the wine then spit. Judge the wine from the second sip.

Water will clean the palate and will not affect the taste of the next wine. In wine tasting vary light cheese and almost tasteless biscuits are used. If you will be having several wines at a dinner, start in the opposite order, white to red, lighter to stronger.

I would have a drink of seltzer water and eat a cracker. This should clean the palate efficiently.

A dry biscuit or a piece of mild cheese. Crushed ice is also a good one and is used by foodies for the same reason between causes. It is sometimes flavoured with lemon.
