Use a deep roasting pan. Find a vessel to put the grease in.
Do not pour goose grease in your sink, you will pay a plumber a lot of money to clear that sink if you do.

You want the goose to register at least 180 degrees F. using a meat thermometer. then it will be done. About 20 minutes per pound at 325 degrees F. Shield it with foil til its about done, then take off the foil about 30 minutes or so before its done so it may brown.

I have a 10lb goose in my oven as we speak, so to speak. I put it in at 180 deg. (fan) at 10.40 and it is just about done. Remove foil for last 20 mins. Let it stand for 10 mins. then carve.
