I followed recipe exactly--put an egg in--but they don't cohere....could/should I use, for example, a bit of mashed potato just to help them bind?

Add more breadcrumbs, or shape into cakes & refrigerate for about half an hour.

I prefer using course rather than fine breadcrumbs, Japanese panko bread crumbs work perfectly, but crushed saltines work well too. Always be willing to add a little more egg and breadcrumbs if it doesn't want to hold together. After my mixture is the right consistency I place a piece of plastic on top, pressing it together rather firmly and chilling before forming into cakes.

Add a little bit more flour, maybe a tablespoon or two. Then shape patties and refrigerate for a bit, then try frying.

Add a little flour; it should do the trick. Corn starch is good.
