I admit I notice this most in the hours or day after eating food that is kind of strong. Like really sweet snacks, or very sour juices. Mostly sweet, though. Like around Christmas time, with all the cookies--lots of this problem.

I am not a dentist but have included a link to one with information on this in my sources. I totally know what you mean--it HURTS when a taste bud get swollen! This happens to me sometimes, too. As you already know, it goes away after a while.

I may be wrong, but if what you are talking about only occurs 2-3 times a year, then it is a dead taste bud. It is very painful and only eating less acidic foods/juices and episodes of dehydration will lessen the episodes. Have had several in my lifetime.....a couple even left bleeding. Not a pleasant experience to be sure.
After eating highly acidic foods and/or juices, make sure you drink water to dilute the effect of the acids. I have had bad times when I eat a lot of tomatoes, spices, lemons, lymes, etc.

I get this all the time and it totally hurts! Sometimes you can also get them from trauma, like unknowingly poking it with something sharp/biting your tongue etc.
