20 minutes a pound is the standard time so YOU do the math, it's too late in the day for me. Wrap it in foil for all but the last 20 minutes of baking time and then take the foil off allowing it to brown. A little butter herb glaze will help the browning process.

Herbed Roast Turkey Breast
Ingredients
1 teaspoon salt
1 medium onion, peeled and quartered
2 carrots, peeled and quartered
2 celery stalks, cut into chunks
4 sprigs parsley
6 tablespoons fresh chopped sage
1 whole bay leaf
2 tablespoons fresh chopped thyme
2 tablespoons butter, melted
1/4 teaspoons black pepper
1 -5.5 lb bone in turkey breast, cleaned and patted dry
Directions
Preheat oven to 325 degrees.
Sprinkle turkey breast with 1/2-teaspoon salt. In a roasting pan, mound carrots, onion, celery, parsley, and bay leaf in the center. Gently loosen the skin from the breast; sprinkle underneath the skin with 1/2 the sage and thyme. Rearrange the skin over breast and place turkey skin side up on the mound of vegetables. Brush turkey with 2 tablespoons of butter and then sprinkle with remaining sage, thyme, 1/2 teaspoon salt and 1/4 teaspoon pepper.
Roast turkey uncovered until meat thermometer reaches 180 degrees. This should take about 2.5 hours.

Why would you bake a fully COOKED turkey breast? Just heat it and serve it!

the way i have prepared these is i put it in my roaster at 300 degrees and baste with butter and garlic. the butter keeps it moist and juicy.
