Never re-use heated cooking oil. Cooking oil that was not cold pressed or expeller pressed has already been heated once. Every time that the oil is heated, it breaks down releasing cancer causing agents (called peroxides) into the oil. Heat it again and it continues to break down. Fast food restaurants change the oil about once a week. If you eat there on the 7th day your food has been cooked in a sea of carcinogens. Possibly a link to epidemic levels of certain cancers. Do yourself and your health a favor and discard it.

Oh yeah! The only time I won't reuse it is when I've fried fish in it. When the crumblies and dark stuff appears, then I throw it out. Don't ask where.

I rarely fry anything but if I do, I normally either use real butter or olive oil.
