Every year since I was a girl my mother has made what she calls Avocado Salad. She is very ill (multiple siezures) this Christmas and can't recall the recipe and I really want to make it for her. All I remember it that is has avocados, crushed pineapple, lime jello, cool whip and walnuts. I don't know how much of what though. If anyone is familiar with this please PLEASE help me and Merry Christmas.

I kind of know what your talking about,but I never heard of putting avacados in it.
I think you just put whatever you can remember in it and just do it that way. I'm sure it will be good. Just do your best,your mother will love it. Sorry about your mom.

i love avocado either. Try this one

Chicken and avocado salad
2 avocados, sliced
2 tbsp lemon juice
2 cups cooked diced chicken or smoked chicken
1/4 cup sliced celery
1/4 cup raisins
2 oranges, peeled and sliced
1/4 cup Mayonnaise
lettuce leaves

Directions
Toss avocados in lemon juice. Combine avocado, chicken, celery, raisins, orandes and Mayonnaise. Toss to combine. PLace on a bed of lettuce leaves. Chill b4 serving. Serves 4-6

This's a really good one too

Smoked Salmon and Avocado Salad
Ingredients
1/3 cup orange juice
4-1/2 teaspoons olive oil
1-1/2 teaspoon rice vinegar
1 teaspoon Dijon-style mustard
1 teaspoon orange marmalade
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 small avocados, halved, seeded, and peeled
3 cups shredded fresh spinach
6 ounces smoked salmon, cut into chunks
1/4 cup shredded radish
12 long whole chives

Directions
1. For dressing, in a screw-top jar combine the orange juice, olive oil, vinegar, mustard, marmalade, salt, and pepper. Cover and shake well. Set dressing aside.

2. Slice avocados. Fan avocado slices over shredded spinach on each of 6 salad plates. Top each with salmon and shredded radish. Shake dressing; drizzle over each salad or pass separately. Garnish each serving with 2 chives. Makes 6 servings.

2 small bulbs fennel thinly sliced 2 sliced peeled avocado a million/3 cup clean lemon juice a million tablespoon extra suitable-virgin olive oil salt to flavor toss at the same time fennel and avocado combine lemon juice with salt till salt is dissolved whisk in olive oil... toss with fennel and avocado i like it served atop butter lettuce. you could mixture cilantro with the fennel,avocado in case you like,,,

LIME JELLO MOLD

--------------------------------------------------------------------------------

4 c. hot water
2 sm. pkgs. lime Jello
24 marshmallows
1 lg. can crushed pineapple
1/2 pt. whipping cream
1 c. chopped nuts

Dissolve Jello in water. Add marshmallows and melt in saucepan over low heat on stove. Let cool until thick. Add pineapple, drained. Whip cream and fold in above mixture. Add nuts and let cool.

THIS IS ALL I FOUND, JUST ADD THE AVOCADO TO IT.



PEAR AND AVOCADO JELLO SALAD

--------------------------------------------------------------------------------

1 (3 oz.) pkg. lime Jello
1 (16 oz.) can sliced pears, reserve pear juice
1 avocado, pitted and sliced
1 (8 oz.) pkg. cream cheese



Mix Jello with 1 cup boiled water. Add 1 cup pear juice. Put pears and avocados slices in bottom of round ring mold. Pour half of the Jello mixture over it. Put in refrigerator to set. After it has set, mix other half of Jello mixture with softened cream cheese, using electric mixer. Pour over the set gelatin and refrigerate until all set. Unmold on a bed of lettuce.
