This is one of favorite cookie recipes from the old joy of cooking. Enjoy.
Preheat oven to 375*.
Beat until soft:
1/2 cup butter
Add gradually and blend until creamy:
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar
Beat in:
1 egg
1 cup peanut butter
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon real vanilla extract
Sift before measuring and add:
1 to 1 1/2 cups all-purpose flour
Roll the dough into small balls. Place them on a greased cookie sheet. Press flat with a fork. Bake about 10 to 12 minutes.
If your worried about any cookie burning put parchment paper under the dough. If anything burns the parchment paper will. Enjoy.

Preheat over to 350.
Cream together 1/2 C. peanut butter and 1/4 C. shortening.
Add 1/2 C. brown sugar and 1/2 C white sugar, 1 well beaten egg.
Sift in 1 C. flour and 1 tsp. Baking Soda
Drop by teaspoonfuls on ungreased cookie sheet and press with fork.
Bake 10-15 min. Makes 4 1/2 Dozen

Peanut Butter Cookies
1 1/4 cups flour, sift or stir before measuring
1/2 teaspoon salt
1 teaspoon baking powder
1/2 cup shortening
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1/2 teaspoon vanilla
1 egg
PREPARATION:
Sift together flour, salt, and baking powder; set aside. Cream shortening, peanut butter, and sugars; beat in vanilla and egg. Stir in flour mixture, blending well. Shape mixture into 3/4-inch balls; place on greased baking sheets. Flatten each cookie with the tines of a fork; dip fork in flour periodically to keep it from sticking to the peanut butter cookie dough.
Bake peanut butter cookies at 375° for about 10 to 12 minutes

This is the easiest one I have ever found and it tastes more like candy than a cookie.
1 cup peanut butter
1 cup sugar
1 egg
1 teaspoon vanilla
Mix all together and roll into balls. Take a fork and make a cross with the tines on top. Bake in 350* oven for about 10 minutes.

Grocery store, Isle #3, buy a roll, take them home, slice them and add some almonds or walnuts or shiney sparkles on top, bake them then tell everyone that you made them.
Well you sort of make them you baked them and added the spinkles but they can think they were made from scratch.
