Start by determining how you use the kitchen..do you cook alot? Do you bake? Do you entertain? Do you have the family for holidays every year? Are professional-style appliances what you need? Do you need a particular type of storage? Do you have a lot of dishware/glassware? You need to determine your priorities.
Then, start looking through magazines and randomly tear out pages that have some looks you like. Put them all in a folder and after a couple of weeks, go through it. You will see what trends you tend to go after. That way you can determine light wood or dark wood or painted cabinets, traditional or contemporary, etc. Keep in mind what room you kitchen adjoins in regard to flooring. You might want to maintain a flow as far as color. Tile is great for kitchen flooring, so is laminate as long as you don't flood it someday (it delaminates). Wood is great too, but it will scratch, even the hardest Brazilian Cherry will scratch.
Get an idea of the countertops you like: granite, silestone or other solid surface, formica, tile. Think also about a backsplash. I think the floors, countertops and backsplashes can be tied together, or at least the counter and the backsplash.
If you go to a professional kitchen designer, go equipped with a floorplan and with dimensions.

if you have never done a remodel before than try to get a design student from your near by college or some other kind of pro help. The chain stores like HD or L--e's will have you believe you can do all of it your self and you can't! If you kinda know what you want already then find a really good contractor, make sure the are licensed, insured and bonded. Tell them what you would like to do and get a few estimates. You can provide the materials and have the contractor do the rest. This sounds simple but it's not. Have just been through a bath & bedroom remodel and not one part was fun. One way or the other you will need a pro for the electrical and plumbing. It's not going to be cheap and make sure you get a contract and no money up front. Also make sure every little detail is spelled out in detail and everyone is on the same page.

you should remodel your kitchen as per Indian vasthu (It is like Feng- Shui). The oven and fire related things should be placed in southeast corner and the sink, water flow items should be placed in northeast corner of the room. The kitchen store should be placed in south and dining should be in mid north. This placings will give a good power for your house and food cooked in this kitchen will give good healthiness and will give good digestion.

Start by planing. Do not tear into this if you are living here without a good plan. Set stages and stick to them. Also look deeper into things such as your plumbing before you get caught with no plumbing on a weekend.
I believe it would make most sense to go floor to cieling as far as any sort of order. I like to remove everything I can and do what ever needs to be done to get floors level and walls plumb, this helps quite a bit.
