if you let them sit in a bowl of water they are good for about 2-3 days......if they are not in water only a day....

not very long at all. after you cut & peel potatoes, oxidation settles in (air making contact with the soft tissuey fabric of the potato). it rapidly turns dark grey-to-black. somewhat edible after that point but most people do not want to eat food that doesn't appear to be their food. after you cut a potato, give or take the heat element, i'd say 5-10 minutes. some claim if you place the cut potato in water, this retards oxidation & it does for a while but in the long run, once cut, potatoes are best prepared asap.

The problem is they start to oxidize and turn all ugly and crazy looking. You need to keep them out of the air so store them in water. Best option is cook them. Like if you don't have time now to make them all the way but you know that eventually you will make mashed potatoes, then boil them now and then strain them and stick them in the fridge and they will not oxidize and will stay good much longer. Then when you're ready to cook them the rest of the way just take them out and warm them up and proceed as usual.

Make sure they are completely covered with water, set into the fridge. If you have potatoes that are a little on the soft side, you can peel, slice and put in ice water in the fridge and they will harden up again..

Not too long before they start to turn brownish...After cutting the potatoes...put them in iced cold water before use.

potatoes, like apples, get oxidised easily (turn brownish). soak them in water with a bit of salt.
