As a Catholic Pastor Billy says: I'm going to add my two cents.
1. both the empty cross and crucifix are Christian symbols and both are used by Catholic Christians yet the same can't be said about non-Catholic Christians.
2. the reason Catholic symbols are used by Hollywood is simply because Catholic Christianity is more readily recognised. secondly the reason these are used in horror and hateful movies which attempt to present good as evil and evil as good is because prophecy advises us the true Church will be continually under attack by the evil one.
3. Certain Catholic priests do have the ministry of exorcism and also this is another sign of the true Church as we learn from the scriptures Jesus told his apostles to leave another person alone who was casting demons out of man. Our Lord taught this was sign of being for us, for his Church and not against it simply because this action of casting out demons would be against Satan's desires and a house divided falls but we know that Christ's house will never fall.
Now as far as a crucifix being used in symbolism, the non-Catholics who posted answers seem to forget or are not familar with the teachings of the apostle Paul who wrote "I preach a Christ crucified". Clearly Catholics have crucifixs because the apostles taught a Christ crucified as this is what re-joins us to the Father in our redemption. Another poster said it right when explaining the wood of the empty cross does not redeem us but the precious blood of Jesus. And so Catholics use both symbols as they are both part of the gospel story. Catholics present the entire gospel story but lets not forget however how interested Evangelical Protestant were in Mel Gibson's movie "the Passion of the Christ"
Obviously they wouldn't have shown the great interest in going to see the Passion if they had already receiving the entire salvation story like Catholics regularly do.
In the church I attend there are several symbols of the risen Jesus and also a crucifix.
Folks I honestly feel the richness of Christianity can only be understood thru Catholic eyes. Peace of Christ

A "Catholic Cross" is the Christian cross. Everything Catholic is Christian, for the Catholic Church is the Christian Church founded by Jesus Christ for all mankind. Anything not Catholic is not truly Christian, or at least not fully Christian.
A cross without Christ is just a piece of wood. Catholics recognize Jesus Christ as our Savior by remembering the moment of our salvation, when Jesus was on the cross.
Yes, Christian (Catholic) priests have preformed exorcisms since apostolic times. Whether Protestants have ever attempted an exorcism I couldn't tell you.

Catholics have a cross with Jesus on it to remind us of what Jesus did for us on the cross. The cross by itself doesn't have any meaning. Only the cross with Christ crucified has any meaning.
A lot of Protestants who subscribe to the Protestant tradition of "faith alone" want the glorified Jesus, but they reject the crucified Jesus. This is because they want the glory without the cross. But Jesus said that only those who are willing to take up their cross daily are worthy to be called His disciples.
Just like they say in the gym, "no pain, no gain". Jesus suffered and was put to death, and so were many Christian saints in the history of the Church. But because Jesus is God, he is able to make our suffering redemptive when we offer our suffering up to join with the suffering that Jesus endured for us on the cross. And the crucifix symbolizes this for us.
By the way, we Catholics know that Jesus rose from the dead. People who think that we don't know this are ignorant of what the Catholic Church teaches. They would do well if they took the time to read the Catechism of the Catholic Church so that they can give an educated opinion about what the Catholic Church teaches and not an opinion about WHAT THEY THINK that the Catholic Church teaches.

Fear. The Catholic Church was built on fear. Apparently it's done to remind you of the pain Jesus was in to save everyone's sorry souls. I've also been told that being Christian and Catholic is the same thing. Whatever.

The cross does not save by itself. It is just a piece of wood. Wood cannot be worshipped, wood cannot save. It is Christ crucified on the Cross for our sins who redeems us. Catholics worship Christ, not the wood. Just like the Bible. Catholics worship Christ, the living Word of God incarnate -- not the book. The Book does not save by itself. It is the Word of God (Christ Himself) who saves. Maybe this is where the confusion lies with so many people.
I hope this helps you.

Yeah, David's pretty close. I just think that I should add that they haven't gotten over the fact that Christ has already risen. Some people don't seem to get that. That we have to nail him over and over and over and over and over and feel guilty. He's already risen, leave him alone.
