Because God is a God of justice. There has to be blood shed to cover sin. In the Garden of Eden, after Adam and Eve sinned, God made clothes for them from animal skins. And after that he asked the Israelites for animal sacrifice for forgiveness of sins. This was a forshadow of the coming of the Messiah, Jesus Christ. (The Lamb of God) who takes away the sins of the world.

animal sacrifice is symbolic. The ritual was started by Abraham when he was asked to sacrifice his son Ishmael in the name of God. He did but miraculously Ishmael was replaced by a sheep after that day an animal is sacrificed to reasure ourself that we will sacrifice any thing and every thing for God Al Mighty.
