BANANA WALNUT CAKE
1/2 c. soft butter
1 tsp. vanilla
1 1/2 c. packed light brown sugar
3 eggs
2 1/4 c. sifted all-purpose flour
2 tsp. baking powder
1 tsp. salt
1 tsp. baking powder
1/2 tsp. salt
1 1/3 c. mashed ripe bananas (3 lg. or 4 med)
1 1/4 c. milk
1 c. chopped walnuts
In large mixing bowl, cream butter, vanilla and sugar until light and fluffy. Beat in eggs. Sift together flour, baking powder, baking soda and salt. Mix bananas and milk. Blend dry ingredients into batter alternately with banana mixture. Stir in walnuts. Turn into 2 greased and floured 2-inch deep 8-inch layer cake pans or 2 greased and floured 9-inch layer cake pans.
Bake in 350 degree oven for 30 to 40 minutes, until cake tester inserted in cake comes out clean. Cool 10 minutes, turn out onto racks and cool completely. Frost with Cream Cheese Frosting. Makes 1 (8 or 9 inch) layer cake.
CREAM CHEESE FROSTING:
2 pkg. (3 oz. each) cream cheese
3 c. unsifted confectioner's sugar
1 tsp. vanilla
In large mixing bowl cream cheese until smooth. Gradually beat in confectioner's sugar and vanilla; beat until smooth.

Ingredients
1 1/4 cup sugar
1/2 cup veg oil
2 eggs
2 mashed bananas (very ripe)
1 1/2 teaspoon vanilla
1 cup buttermilk or sour milk
1 teaspoon baking soda
2 cups flour
1 teaspoon baking powder
1 cup finely chopped walnuts
Instructions
Mix everything in the same bowl (using a wisk to make smooth) bake in a 9X13 inch pan (greased) at 350F for approx 35 minutes or until the top is brown and springs back when touched.
This cake is quite sweet and does not need a frosting

CRUMB TOPPING:
1/2 cup sugar
1/2 cup all-purpose flour
1/4 cup butter
DIRECTIONS
Place first seven ingredients in a large mixing bowl. Beat on low speed just until combined, then on medium for 2 minutes. Pour into a greased and floured 10-in. tube pan or a 13-in. x 9-in. x 2-in. baking pan. In a small bowl, combine topping ingredients until crumbly; sprinkle evenly over batter. Bake at 350 degrees F for 45 minutes. Cool. Store well-wrapped in refrigerator.
