put oranges and pineapples with bay leaves, salt, hot chopped chilies and cloves in the middle where the stuffing goes. just cut up the oranges, leave the peel on, its ok. on the outside sprinkle generously with turmeric, garlic powder, crushed red pepper and sea salt. cook breast DOWN and covered in foil till the last half hour. then put it upright, baste it and brown the breast. its great.
ps. i don't eat the stuffings, but some of my friends do.

just ate my brined turkey. totally agree with brining chicken & turkey.

in a large pot, boil 1 cup sugar & 1/2 cup of salt. 1 tablespoon of allspice and some rosemary.

ideally, you'd keep in the fridge overnight, good luck fitting in your fridge. use your balcony or keep it outside somehow. you can keep it on the countertop for 5 hours or so.

brine ends up being much healthier and almost impossible to go wrong in terms of moistness. no basting needed!
