Roasted or boiled baby red potatoes, carrots (fresh), cut into strips, cooked, and tied with a small piece of leek or green onion (they look like little bundles of orange logs - so cute!), breaded cauliflower or broccoli, a nice colorful salad. That's what I'm having with my prime rib.
A rice dish with red and green peppers and onions would be nice also - get some colorful veggies and starches - your dinner will look great, and really no matter what you make, it will taste great too! (Everything tastes great with prime rib!)

pan broasted potatoes with a touch of garlic and lot of parmeesan cheese sprinkled on top. Looks very tastry particularly if you mix white potatoes and red leaving the peel on the red. Easy to fix too.
Frozzen corn. Freshlike is the best frozen corn I have found. You really can't beat frozen corn.
Au Jus you can buy the mix at any store practially. Or use canned beef broth. I cheat. I take a few beef ribs an dboil them with some onion and a bit of garlic. I strain the broth and serve it as AuJus.
Mushroom Pilaf. I use about 1/4 cup of the black native wild rice to a cup of regular white rice. The black native rice actaully takes about 60 minutes too cook so I cook it seperately. the Rice is suppose to open and curl and be soft. Once th enative rice is done I do the orozo and white rice when it is done I add the already cooked native rice and the sliced mushrooms. A very good pilaf and Pilaf is always one of the attractive dishes. Sets nicely on any table. it has th eadded plus tha tyou don't have to get i tto come out at the same time as th eohter foods. you can cook it ahead even and micro ave it to heat it. It looses nothing in the reheating.

Roasted asparagus and a nice soft white rolls for soaking up the essence of the prime rib.
Here is my favorite way to make roasted asparagus. Toss some asparagus, chopped portobello mushrooms and chopped garlic in a little olive oil. Spread it on a baking sheet and cook for about 25 minutes at 250.

With my Prime Rib, please just give me some good old-fashioned mashed potatos with some of the au jus gravy, and some nice rolls to dip in the au jus.
When you're serving the best piece of beef that money can buy, no need to embellish too much.
The Founding Fathers like Ben Franklin and Thomas Jefferson used to love Yorkshire pudding with their Prime Rib.

Yorkshire pudding and Roasted Garlic Mashed Potatoes (to roast the garlic, cut off the end, drizzle with olive oil, salt, pepper, little thyme, encase in triple-foil (aluminium), and throw in the oven with the meat/ When you rice, mash or whatever your potatoes, squeeze some of that lovely garlic into the mix) and make as usual. Also, some blanched green beans, saute'd in butter and garlic.
