Super easy - scrub potatoes - cut in 1/2 then 1/2 again you now have wedges - wash in ice cold water until the water runs clear. Dry potatoes on a towel then toss into a gallon size zip lock bag with 1 cup Italian dressing shake to coat - arrange on a baking dish then bake at 350 for 30 minutes to crisp on outside creamy on the inside - serve warm. FIRST RECIPE:
8-10 pounds potatoes, washed, unpeeled, cut into wedges
1 pkg French onion dip mix
1/2 cup Butter or margarine
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet with the olive oil. Pat potatoes dry with paper towel. Melt butter and stir in the dried onion mix. Drizzle the mixture over the potatoes. Cover pan with aluminum foil and bake until done. (Check after 25 minutes)
SECOND RECIPE:
Wash potatoes, cut into wedges, pat them dry. Dip potato wedges in melted butter and then roll in seasoned bread crumbs (you can use crushed Stove Top or another mix). Bake on lightly greased baking sheet in preheated (350 degrees) oven for 20 minutes. Remove from oven and turn wedges; cook for 10 to 15 minutes, or until tender.

POTATO WEDGES
2 med. potatoes, each cut into 8 wedges
Vegetable oil
Seasoned salt
3/4 c. dairy sour cream
1/3 c. shredded Cheddar cheese
Place potato wedges, cut sides down, on rack in broiler pan. Brush with oil; sprinkle with seasoned salt. Set oven control to broil and/or 550 degrees. Broil with tops about 3 inches from heat until brown, about 5 minutes. Turn; brush with oil. Sprinkle with seasoned salt. Broil until tender, about 5 minutes.
Spoon sour cream onto center of large serving platter; sprinkle with cheese. Arrange potato wedges around sour cream.

Cut potatoes in wedges and put in bowl. Add some oil, salt and pepper and herbs or seasoning of your choice,toss and mix well. Bake in oven in shallow pan on 400 til brown.

cut potatoes as stated above. spread on a cookie sheet and spray with pam instead of the oil mess. This is good for sweet potatoes, too.
