Boil them. Make sure the water is boiled before you put the shrimps in, and drain once they turn pink/red. Then straight away put them in icy water to chill them asap to keep the moist in.

Peel and de-vein the shrimp. Season them lightly with salt and pepper. Add oil to a med-high saute pan and stir fry them until cooked all the way through.

Let them cool, cut them up into the size you want for your salad, and mix with the other ingredients.

Assuming they aren't already cooked (they'd be pink if they were), then leave any shells on.

Thaw, if need be, then pat them dry.
Stick 'em in the microwave for 1 minute. Have a look at them. If they're not all turned pink, move the cooked ones to the middle then cook another minute.

It's important not to cook them too long or they will go rubbery.

Remove shell and devein if you want to. Fry in olive oil for a few minutes until they are all pink.

You can buy frozen shrimps that are already cooked and are meant for salads.

Just boil them in some salted water with lemon juice. As soon as they turn opaque, drain them.
