Cheesecake With Fruit Topping
Crust Ingredients:
1/4 cup confectioners' sugar
1 1/2 cups graham cracker crumbs
4 ounces butter, melted

Filling:
1 cup granulated sugar
3 packages (8 ounces each) cream cheese
1 teaspoon vanilla extract
2 teaspoon lemon juice
4 eggs
1 can (21 ounces) cherry pie filling
PREPARATION:
Combine crust ingredients; pack firmly in the bottom of a spring form pan, 8 or 9-inch.
Combine filling ingredients and mix thoroughly. Pour into the graham cracker crust; bake at 350° for 50 minutes. Remove cheesecake from the oven. Cool and then top with pie filling.

The Philadelphia cream cheese traditional 1-2-3 recipe does not call for sour cream. It is on the inside (or sometime outside) of the box. It calls for eggs, sugar, vanilla and a graham cracker crust.

Cheese cake - 1 (9-inch) graham cracker crumb crust
1 (8-oz) package of cream cheese, softened
1 (14-oz) can Eagle Brand sweetened condensed milk
1/3 cup RealLemon reconstitued lemon juice
1 teaspoon vanilla extract
1 can of canned fruit fillilng (cherry, blueberry, etc.)
In large mixer bowl, beat cheese until fluffy. Blend in Eagle condensed milk until smooth. Stir in RealLemon juice and Vanilla. Pour into crust. Chill 3 hrs or until set. Top with pie filling before serving.
I make this every year and EVERYONE loves it !! If you use fat free cream cheese & fat free sweetened condensed milk & reduced fat graham cracker crust you cut the calories A LOT and it still is very good!

New York Cheesecake III
INGREDIENTS
1 1/2 cups all-purpose flour
1/3 cup white sugar
1 egg, beaten
1/2 cup butter, softened
2 1/2 pounds cream cheese, softened
1 3/4 cups white sugar
3 tablespoons all-purpose flour
5 eggs
2 egg yolks
1/4 cup heavy whipping cream
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Lightly coat a 10 inch springform pan with spray oil. Note: You could use a 9x13 inch pan instead.
To make the crust: Combine 1 1/2 cups flour, 1/3 cup sugar, 1 egg and 1/2 cup butter or margarine. Spread to the edges of the pan. Prick all over with a fork, then bake 15 minutes at 400 degrees F (200 degrees C). Allow to cool.
Increase oven temperature to 475 degrees F (245 degrees C). In a large bowl, combine cream cheese, 1 3/4 cups sugar, 3 tablespoons flour, 5 eggs and the yolks and mix thoroughly. Add cream and mix only enough to blend.
Pour filling over crust and bake for 10 minutes at 475 degrees F (245 degrees C). Reduce temperature to 200 degrees F (95 degrees C) and continue to bake for one hour. Turn oven off, but leave cake in for another hour. Don't worry if it looks a little jiggly in the center.
Chill overnight. This is imperative! If desired, top with your favorite fruit or serve plain.
New York Cheesecake II
INGREDIENTS
2 pounds cream cheese
3/4 cup white sugar
2 eggs
1 teaspoon vanilla extract
2 tablespoons cornstarch
1 cup sour cream
1 1/2 cups graham cracker crumbs
6 tablespoons melted butter
1/4 cup white sugar
DIRECTIONS
Preheat oven to 400 degrees F (205 degrees C).
Mix graham cracker crumbs, melted butter, and 1/4 cup sugar together. Press mixture onto the bottom of one 9 or 10 inch springform pan. Place in freezer for 10 minutes.
Cream 3/4 cup of the sugar and cream cheese until smooth. Beat in eggs, vanilla, and cornstarch until just mixed. Stir in sour cream until blended. Pour into prepared crust.
Bake at 400 degrees F (205 degrees C) for 45 minutes. Turn oven off and leave cake in oven with the door ajar for 3 hours. Serve with your favorite topping.
New York Cheesecake I
INGREDIENTS
1 3/4 cups finely ground graham cracker crumbs
1/4 cup finely chopped walnuts
1/2 teaspoon ground cinnamon
1/2 cup melted butter
3 eggs
2 (8 ounce) packages cream cheese, softened
1 cup white sugar
1/4 teaspoon salt
2 teaspoons vanilla extract
1/2 teaspoon almond extract
3 cups sour cream
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Mix graham cracker crumbs, walnuts, cinnamon and melted butter together. Press on bottom and sides of a 9 inch springform pan.
Combine 3 well-beaten eggs, cream cheese, sugar, salt, vanilla and almond extract. Beat until smooth. Blend in the sour cream and pour into the crumb crust.
Bake at 375 degrees F (190 degrees C) for about 35 minutes or just till set. Cool. Chill well, about 4 or 5 hours. Filling will be soft. May be served as is or topped with your favorite fruit topping or glaze.

yes go to the store and buy a pack of cheesecake take read the directions on back then when done put in oven usually on 360 degrees every 5 mins. check to see if done
