Exodus 19:5-6: “If you will strictly obey my voice and will indeed keep my covenant, then you will certainly become my special property out of all other peoples, because the whole earth belongs to me. And you yourselves will become to me a kingdom of priests and a holy nation.”

All nations belonged to God, but the Israelites could become his special property, eventually serving as priests in behalf of all mankind.

Did you notice the qualification? "If you will strictly obey my voice and indeed keep my covenant."

Compare please Acts 10:34 which speaks of God's impartiality.

The bible says that Israel, in which every nation under heaven is blessed, are the chosen ones. There has always only ever been one Israel, the Israel of God, chosen from the foundation of the world to be redeemed, conformed into the image of Lord Jesus Christ, the son of God, and called by him to be justified by his blood, and to be sanctified by his word.

There are many stories of how many times the jewish people became pagan worshippers and God was going to destroy them and he gave them another chance or let them become invaded and become slaves instead. Talk about grace.
