My obvious answer would be Jesus, just because I love Him so much and would love to spend time talking with Him face to face - but besides Him, it would be King David - He was described as a man after God's own heart - he was probably one of the worst sinners in the Bible, and yet God approved of him because his heart loved God and he was quick to repent when he knew he'd done wrong. I want to see what kind of person he really was - the person behind the emotional outpourings in the Psalms.

If Eve, no meal with apples in it please.

Joseph, Jacob's son, was very impressive.
He had all reason to be resentful and hate his brothers for his treatment.
He was sold as a Slave; thrown into prison injustly; yet through his continuous trust in God, inspired those around him and rose to be Prime Minister of Egypt, the 2nd most powerful man in the most powerful nation of his time.
From that position of influence, he could have made his brothers suffer when they visited Egypt, but he kept re-paying them with goodness.
