well honestly you can make white or brown gravy but if your actually making game hens then i would do a different sauce. otherwise your just making chicken so take the drippings and add about 2 or 3 tablespoons flour to them this is what is going to make white or brown gravy. if you want brown gravy brown the flour a little. then add about 2 cups milk. then bring to a slight boil and simmer till it thickens. gravy is a little bit art so take your time with it and keep stirring every once in a while.

take some of the drippings put in sauce pan put some milk & water in cup add heaping spoon flour stir dump in pan stir add water stir until bubbly on med to thick add mor water then put on low so you don,t scorch add salt & pepper
