Boil potatoes - about 45 minutes. When cool, peel and cut into cubes. Add mayonnaise, salt, pepper, celery, onions and crumbled hard boiled eggs. Mix together. Top with slices of hard boiled eggs and sprinkle with paprika for color.

Recipe: German Potato Salad

Amount/ Ingredient
5 lbs. Potatoes (use a waxier variety: New Red Potatoes also work well)
Boil them whole, cool and cut into 3/4 - 1" cubes (peeling is optional - the red skins add nice color to the dish)
1 lb. Bacon - cooked crisp (reserve the drippings)
1/2 cup Diced onions
1 Tbs. All-purpose flour
3/4 cup Water
1/4 cup Apple cider vinegar
2 Tbsp. Sugar
1 1/2 tsp. Salt
To taste Freshly ground black pepper
3 heaping Tbs. Salad dressing (Miracle Whip)
4 Hard boiled eggs - chopped




Cooking instructions:


Saute onion in 1 Tbs. bacon drippings until onions are clear
Add flour and cook for 2-3 minutes on medium heat
Add water and vinegar, bring it back to a simmer to thicken
Add salt, pepper & sugar
Stir in salad dressing
Add bacon & eggs

Pour over potatoes, mix carefully to coat potatoes but not mash them

Bake at 350 - 1 hour (until warmed through)

**This works best if you can make it a day ahead, refrigerate it and reheat it before serving
**You can easily double the recipe

Loaded Baked Potato Salad
2 quarts

4 pounds potatoes, peeled
1 pound bacon, crisply cooked, and chopped into 1/2-inch pieces (fat reserved, if desired)
4 ounces unsalted butter, softened
1/2 cup chopped green onions
2 cups grated or shredded cheddar cheese
1 1/2 cups sour cream
1 tablespoon fresh ground black pepper
salt, to taste

Cook whole potatoes in boiling, unsalted water until tender. Refrigerate until chilled, then chop into one-inch pieces.

Transfer the potatoes to a large bowl along with the remaining ingredients and thoroughly combine. Add some of the reserved bacon fat if desired.

Chill at least 2 hours before serving. Adjust the seasoning prior to serving.

Here is my favorite potato salad recipe:

1/2 cup miracle whip
1 tablespoon each: paprika, onion salt, black pepper
grape tomatos (I used a whole pint cause I like them!)
6-8 red potatoes, boiled in 1/2 cup water until soft, cooled and cubed
2 hard boiled eggs, diced
1/4 of a vidella onion, diced

Combine all ingredients in a bowl. Refridgerate for 15+ minutes to let flavors solidify. Adjust seasoning to taste.

if you have a potato recipe just omit the mustard. but use all the other ingredients. I really don't think it would make a difference if you had the mustard in it or not.
