I bought 3 lbs. yesterday. Put them in a baking pan in the refridge. Now some are open. Are they safe to cook? Or only the closed ones? I know you can only eat the open ones.

It is fine that some of them opened in the fridge, that's normal. Wash them and scrub any "beards" off. Pinch the ones that are open to shut them. Once you cook them, throw out any that do not open.

If they do not close after washing them you should not eat them. Most likely wont hurt you but wont be very good
