Anchovy and White Bean Pizza:

1 (15.8-ounce) can great Northern beans, rinsed and drained
3 tablespoons olive oil
1 tablespoon fresh lemon juice
1 garlic clove, halved
1/8 teaspoon pepper
1 (12-inch) ready-made pizza crust
1/2 red onion, sliced into thin rings
1 to 2 (2-ounce) cans anchovies, drained
1/4 cup shredded Parmesan cheese
1 tablespoon chopped fresh oregano
Freshly ground pepper
1 to 2 cups torn arugula (optional)

Combine first 5 ingredients in food processor. Pulse until smooth. Spread bean mixture evenly over crust. Top with red onion and next 4 ingredients. Bake at 450° for 12 to 15 minutes. Top with arugula, if desired.

Yield: 1 (12-inch) pizza

I haven't had too many anchovies, though I'll be eating more since I heard that simply "melting" one in oil for spaghetti or other sauces, etc., gives dishes a good flavor that doesn't taste at all like eating an anchovy plain.

I do like to make sauces for stir frys (veg only, or veg's + pork/chicken/shellfish) though with bottled "hoisin" sauce, which is just the juice from pressed anchovies layered with salt.

not a recipe per se, but last month in rome i've had an appetizer called "zucchini fiori" - zucchini flowers. they're battered and fried, with or without anchovies inside. very delicious. i'm having trouble finding it here in new york though. tsk.

another favorite is crostini with crumpled egg, bottarga (di tonno) and anchovies.

bagna cauda, an Italian fondue with cream, garlic, anchovies, butter, and olive oil
I like the recipe modified by the Italian immigrants that came to Argentina at the end of the 19 century/beginning of the 1900's
the original one from Piemonte is more oily, my favorite one is more creamy

Any salad and also in pizza. Sometimes I have hot bread (baguette) olive oil and anchovies. Also a sliced onion.

bagna cauda
sounds strange to have an oil fondue with anchovies dissolved into the oil but it is really good
