I made some mulled apple cider for the first time this year and it was a huge success and made the house smell wonderful!

Mulled Apple Juice with Ginger
(from ATCO Blue Flame Kitchen 2003 Holiday Collection cookbook)

Zest from 1 lemon
12 cups apple juice
1 can (355mL) frozen apple juice concentrate
3/4 cup finely chopped crystallized ginger
3 cinnamon sticks
1 tsp whole cloves
1/2 tsp whole allspice
Combine all the ingredients in a large tea ball or cheesecloth bag except the apple juices.
Put spice mix and juices in a slow cooker and cook on high for 3 hours.

I had a bottle of rum and a bottle of brandy beside the slow cooker along with some mugs for people to serve them self (I liked the brandy the best).
You could also make this in a pot on the stove if you don't have a slow cooker.

This is a wonderful holiday drink that guests will love, and it won't get people too loopy too quickly. I made it last weekend and it was a huge hit. :) Make this about an hour before your guests arrive and the whole house will smell like Christmas when they get there.

Hot, Spiced Cider

You'll need:
- A large, clean stock pot
- store bought apple cider
- 4 or 5 cinnamon sticks
- dried berries or raisins (you can sometimes find little packages with dried blueberries, raisins, cranberries and cherries all mixed in. If not, whatever you can find.
- your favorite rum. You can use something a little less expensive than you might usually drink, since it'll be so well-flavored.
- a few cloves if you have them
- nutmeg, cinnamon

Pour enough cider into your pot for it to be 3/4 of the way full. Put it on a high flame. Add the rum, taking up half the empty space. Sprinkle in nutmeg, cinnamon and stir well. Drop in the cinnamon sticks and a handful of the mixed, dried berries and the cloves. Just when it comes to a boil, reduce to a low flame and let it steep for about 30-45 minutes, covered. The longer it has, the better. Stir, and use a large slotted spoon to skim the cider to remove the cloves, the cinnamon sticks and half of the berries. You can pour it through a strainer if you can maneuver it, but it’ll be very heavy and very hot. Replace with new berries, 2 fresh cinnamon sticks, and leave on very low flame for the rest of the party, and serve warm to hot. People can serve themselves right from the pot. Merry Christmas!

my first choice would be homemade eggnog, but store bought
with a few additions of your own is also quite good.
Recipe for homemade eggnog:
Milk or cream whichever you prefer and the amount depending on how manyguest, although you can store in frig for a few days..
cream of coconut
eggs yolks
I also like to add a little vanilla icecream ( not in traditional recipe)
an oz. of light barcardi rum to every glass of milk
an oz. of cream de cocoa to every glass of milk
and sweeten to taste.( with sweet milk, sugar, or sugar substitude
blend all until smooth serve chilled in an attractive glass and shake a little nutmeg or cinnamon on top,,optional also a little

Homemade Eggnog
12 eggs
1-1/2 cups sugar
1/2 teaspoon salt
2 quarts milk, divided
2 tablespoons vanilla extract
1 teaspoon ground nutmeg
2 cups heavy whipping cream
Additional nutmeg, optional
In a heavy 4-qt. saucepan, whisk together eggs, sugar and salt. Gradually add 1 qt. of milk. Cook and stir over low heat until a thermometer reads 160°-170°, about 30-35 minutes. Pour into a large heat proof bowl; stir in vanilla, nutmeg and remaining milk. Place bowl in an ice-water bath, stirring frequently until mixture is cool. If mixture separates, process in a blender until smooth. Cover and refrigerate for at least 3 hours. When ready to serve, beat cream in a mixing bowl on high until soft peaks form; whisk gently into cooled milk mixture. Pour into a chilled 5-qt. punch bowl. Sprinkle with nutmeg if desired. Yield: 3-1/2 quarts. Editor's Note: Eggnog may be stored, covered, in the refrigerator for several days. Whisk before serving.

Oprah's Pomegranate Martini
1 1/2 cups pomegranate juice
2 oz. Absolute Citron vodka OR white tequila
1 oz. Cointreau liquor
Cup of ice
Optional: Splash of sparkling water
Optional: Squeeze of lemon
Shake ingredients in a shaker and put in chilled martini glasses. Put pomegranate fruit into glass as garnish.

/2 oz Cointreau orange liqueur
1 oz vodka
juice of 1/2 limes
1 splash cranberry juice
Pour all ingredients in mixing glass half filled with ice, shake and strain into chilled martini glass.
