That depends on your comfort level in the kitchen both pose some pretty high level techniques to complicate a normally easy dish. Although I have the greatest respect for their culinary expertise I am of the simplify school - Keep it simple and you will be able to enjoy it - the more work for the chef(cook) the less enjoyable due to tiredness and lack of diner enthusiasm. People go to these restaurants to praise the chef - they come to your home to dine with you. It is up to your level of comfort and if you feel the effort will be appreciated. Good Luck!

Use an oven bag for big turkeys.
Please empty the inside!
Put butter under skin, along with seasoning.
Also, bake upside down.
Season the inside too.
Season until your heart is content.
Start baking on high, then low.
Baste every 10 minutes...

Cook it the cajun way! Inject cajun spices into the turkey the night before. Deep fat fry the entire bird in a turkey frier (they sell them EVERYWHERE now.. and they are much safer as they use electricity insead of propane...) You will never taste a more juicy bird!

I have brought a Turkey Crown this year, no waste at all, and I would imagine that it will be so easy to cook it. It already has criss cross layers of bacon over it to make it so moist.

~~~I coat mine with some vegtable oil,,,a thin coating,,,sprinkle with salt and crushed black pepper. ohh my,,,,the skin turns out so crispy,,and the turkey meat is super moist,,,,,I didnt have to baste either,,,,best turkey ever........
