I am preparing chicken breast strips that I covered in a marinade of olive oil, wine, sugar, soy sauce, and spices. Plans changed, can't cook it for four hours. Is it okay to leave the chicken in the marinade for that length of time--will it toughen the chicken?--or should I just go ahead and cook it now and reheat it later? Thanks.

I have marinated chicken for over 24hrs before and it just comes out more tender and tastier!

go for it, 4 hrs will not hurt it. Just don't cook the marinade with the chicken as it does contain bacteria and stuff, which, i don't like to have that in my pan swiming with the chicken. lol

Different proteins and foods can be marinated for different lengths of time before they begin to be "partly cooked" from the acids in the marinade (which would make the texture more broken down than you might like).

Fish is the shortest time (less than 2 hrs, I think usually -- though oilier fish like salmon can be longer) ... veggies usually at least an hour... chicken, pork and beef from 2-4 hrs up to 24 hrs, I think.

Wait a few more hours to marinade the chicken.

you can keep the chicken in the marinade for 48 hours

the recipe sound delicious...it's best from my experience to
marinade meat overnight...
but since you have not leave the marinaded chickern in the refrig
until just before your company arrives.....It will not toughen the
chicken and the juices will really penetrate for more flavor...
when is dinner? LOL
