I don't think there is a set measurement, you just need to make sure the juice coats the bananas well. I would suggest not using full strength lemon juice, as this may make your pudding tart. Try mixing the juice with an equal part of water and then coat the bananas.

A very small amount works. Also for banana or apple chips for healthy snacks if you have a dehydrator. I'm a backpacker and former professional Mountain climber and did it for the weight. Dip them and they won't brown. (or get that weird dried banana taste but fresh but crunchy) email me if you want to know how to make beef jerky for 1 fifth what the store charges.

If your going to use anything cover with orange juice. Bananas won't be tart. Drain well. But if you slice just before you mix in they shouldn't turn brown.for a few days.

just enough to cover the bananas (you can put them in plastic baggies and let them soak in it if you choose to add more)

only a little squirt, if you put to much you'll ruin your pudding! :)
