I'm not sure what's in the bottled "potsticker" sauce, but there are various dipping sauces that can be eaten with potstickers.

My favorite simple one when I'm at a restaurant is actually the sauce that's intended for dipping tempura in, which I find tastier and lighter than the usual one that's served with potstickers.

At home, I often make a dipping sauce that has several ingredients, and is usually liked quite well:
...lite soy sauce
...since I can no longer find "red vinegar," I use rice vinegar (or Mirin, etc.) and/or sometimes a little balsamic vinegar if needed
...grated ginger
...sugar
...chili oil

Thicker sauces like hoisin or doctored hoisin, etc., are possibilities too... just depends on what you're in the mood for!

I've seen it in grocery stores and it's actually called pot sticker sauce.

Italian sausage is a different and powerful style i do no longer commonly affiliate it with potstickers. There are some notably spiced Asian sausages however, that are used in soup and so on. i could carry on with a marinara based sauce with chopped green onion, lemon grass, and sparkling ginger.

I believe it is called Ponzu (sp?) sauce. Had it years back in Detroit at the Renaissance Center.

We use
hoisin sauce
and (hot) chinese mustard
