I can't buy lmon tarts at the moment. Live in hull, U.K been to sainsbury's, teso, morrisons, waitrose, Asda, ect all the big shops as well as the local smaller shop Jackson ect and all they seem to have is Jam tarts and mixed ones made with apricot (no lemon).

My bother won't eat the Jam ones. Look's like I'm going to have to home cook them. any know a good recipe.

What I want to know though is, why I can't buy them at the moment. Talked to one shop worker and she said even the suppliers didn't have them.

Mini Lemon Tarts
Preparation time: 30 minutes, plus cooling

Makes 24

Ingredients
250g shortcrust pastry
4 tbsp lemon curd
2 tbsp crème fraîche
small bunch redcurrants
1 egg white, lightly beaten
caster sugar to frost
curls of lemon zest, to garnish

Instructions
Preheat the oven to 220°C, gas mark 7.

Roll the pastry thinly. Cut into discs to fit a 12-hole mini tart tin (use 2 tins or bake in batches). Prick the base of each tart and line with squares of baking parchment and a few baking beans. Bake till golden (8-10 minutes). Remove the paper and beans. Cool.

Mix the lemon curd and crème fraîche. Use to fill the cases.

Dip the redcurrants in the egg white, then the sugar. Leave to dry, then place on top of each tart. Add curls of lemon zest and serve.

Buy a ready made pastry case from Sainsburys, and fill with lemon curd spread available in the preserves aisle.

Lemon curd is a custard-like dessert sauce made with eggs, lemon juice and zest, sugar, and butter. It goes well with scones, short breads, and muffins, and can be used as a filling for cakes or tarts. It may also be spread on bread or toast.

The Kipling, a "mega-freighter" that was bringing a cargo of lemon tarts, 'jammy dodgers' & bakewell tarts from the bakery in the Canary Isles to the Port of Liverpool sank off the coast of Weston-Super-Mare in late November, resulting in the shortage you have become another victim of.

If you take a train down to Weston, many of the street markets will have lemon tarts, though the boxes aren't pretty and many of the tarts taste a little 'salty'.

Probably just sold out this close to Christmas. You can always make the simple version very quickly with frozen pastry and lemon curd, but consider trying this traditional french version: http://frenchfood.about.com/od/desserts/r/lemontart.htm?rd=1

call the phone number on the box of tarts and request the flavor you desire, or ask for their mailing address, so you can write it out as a letter and mail it to the address.
