Mac and Cheese II

"This recipe is so simple to make! It can be a side dish with meatloaf and stewed tomatoes or hold it's own. Enough to make 4 side dishes or 2 main dishes."
Original recipe yield:
4 servings

COOK TIME 45 Min

INGREDIENTS
8 ounces elbow macaroni
2 tablespoons butter
1/4 cup all-purpose flour
2 cups milk
1 cup shredded Cheddar cheese
8 ounces cubed processed cheese food
DIRECTIONS
In a large pot with boiling salted water cook elbow macaroni until al dente. Drain.
In a medium saucepan, over medium heat melt butter or margarine. Whisk flour and stir vigorously. Add milk and cook until thick and bubbly, about 5 to 7 minutes. Add cheeses and stir until completely melted.
In a large bowl mix together the drained pasta and cheese sauce mixture. Toss to coat evenly.
Pour into a greased 2 quart casserole dish. Bake in a preheated 350 degree F (175 degrees C) oven for 30 minutes. Let stand 10 minutes before serving.

Mac & Cheese
5 C Lrg. Elbow Macaroni
1/2 lb. Sharp Cheddar Cheese, grated
1/2 lb. Longhorn Cheddar Cheese, grated
1/2 lb. Mexican Ranchero Cheese, crumbled
1 C Milk
1 1/2 C Crumbled Cheeto’s
Cook the Mac al dente, not quite done
Combine all the Cheeses
Layer Cheese and Mac, Cheese and Mac, (you get it)
Pour in the Milk
Top with Cheeto’s
Bake 45 min. @ 350
Footnote: This also is good with chopped Ham mixed with the Cheese.
Kids love it with Hot Dogs on Top, put them on top the last 15min.

This is the one that I make all the time. Yummy!!
Mac and Cheese
Kosher salt
Vegetable oil
1 pound elbow macaroni or cavatappi
1 quart milk
8 tablespoons (1 stick) unsalted butter, divided
1/2 cup all-purpose flour
12 ounces Gruyere, grated (4 cups)
8 ounces extra-sharp Cheddar, grated (2 cups)
1/2 teaspoon freshly ground black pepper
1/2 teaspoon ground nutmeg
3/4 pound fresh tomatoes (4 small)
1 1/2 cups fresh white bread crumbs (5 slices, crusts removed)
Preheat the oven to 375 degrees F.
Drizzle oil into a large pot of boiling salted water. Add the macaroni and cook according to the directions on the package, 6 to 8 minutes. Drain well.
Meanwhile, heat the milk in a small saucepan, but don't boil it. Melt 6 tablespoons of butter in a large (4-quart) pot and add the flour. Cook over low heat for 2 minutes, stirring with a whisk. While whisking, add the hot milk and cook for a minute or two more, until thickened and smooth. Off the heat, add the Gruyere, Cheddar, 1 tablespoon salt, pepper, and nutmeg. Add the cooked macaroni and stir well. Pour into a 3-quart baking dish.
Slice the tomatoes and arrange on top. Melt the remaining 2 tablespoons of butter, combine them with the fresh bread crumbs, and sprinkle on the top. Bake for 30 to 35 minutes, or until the sauce is bubbly and the macaroni is browned on the top.
If I make it for my grandkids, I leave the tomato off.

Chicken Macaroni and Cheese:
1 (16-ounce) loaf pasteurized prepared cheese product, cubed
1 (8-ounce) container sour cream
1/2 cup milk
2 1/2 cups chopped cooked chicken
8 ounces penne pasta, cooked
Cook first 3 ingredients in a Dutch oven over medium-low heat, stirring constantly, 5 minutes or until cheese melts. Stir in chicken and pasta; cook, stirring constantly, 5 minutes or until thoroughly heated.
Note: To lighten recipe, use light pasteurized prepared cheese product, light sour cream, and 2% reduced-fat milk.
Spicy Chicken Macaroni and Cheese: Substitute 2 (8-ounce) loaves Mexican-style pasteurized prepared cheese product, cubed, for the regular cheese product.
Yield: Makes 4 to 6 servings

Golden Macaroni and Cheese
Serves: 4 Kid Friendly, Vegetarian
Ingredients:
16 oz Mueller's Small Elbow Macaroni
1/2 teaspoon salt
1/4 teaspoon dry mustard
1/8 teaspoon pepper
1 teaspoon worcestershire sauce
2 1/2 cups milk
2 cups shredded cheddar cheese, divided
2 tablespoons flour
3 tablespoons butter or margarine
Directions:
Cook and drain elbow macaroni according to package directions. Preheat oven to 350°. In a medium saucepan, melt butter. Stir in next four ingredients. Blend in milk and worcestershire sauce. Cook, stirring constantly, until thickened and bubbly. Add 1-1/2 cups cheese; stir until melted. Combine macaroni and cheese sauce; mix well. Pour into a 2-quart casserole. Bake 20 to 30 minutes or until hot and bubbly. Top with remaining 1/2 cup cheese; broil just until top is light golden.

My 10 Step Macaroni N Cheese
1. Boil macaroni as directed on box.
2. Drain the macaroni..let cool in a separate pot for 10 min
3. In a separate pot(on low heat) pour about a cup of carnation or regular milk into the pot.
4. Add a quarter of a stick of butter
5. Add about four cups of cheddar cheese, or pre-sliced American Yellow Cheese(both are great)
7. Add two tablespoons of flour to make sauce thick.
8. Add a little Parmesan cheese if you have it.
9. Add the macaroni and mix it in well
10. ENJOY!

Baked Macaroni and Brie
8 oz. dry pasta
2 tbsp. butter
2 tbsp. flour
1 cup milk
1/4 cup heavy cream
7 oz brie, rind removed (about 6 oz. without rind) and cut into chunks
salt and freshly-ground pepper
1/2 cup cracker or fresh bread crumbs
3 tbsp. butter, melted
Preheat oven to 350°. Butter a medium casserole dish or 4 individual 2-cup dishes and set aside.
Boil pasta to al dente. Drain. While pasta cooks, melt 2 tablespoons butter in a large saucepan over medium-low heat. Sprinkle in flour and cook, stirring continuously, 2 minutes, to form a golden brown roux.
Stir in milk and cream. Bring to a boil, stirring continuously, then reduce heat to low. Add cheese and continue to stir until melted and smooth, a few minutes. Salt and pepper to taste. Toss in drained pasta, combine very well. The idea is to let the sauce soak into the nooks and crannies of whatever pasta you're using. Pour into buttered dish(es).
Stir together bread or cracker crumbs with 3 tablespoons melted butter. Sprinkle evenly over dish(es). Bake 15 minutes. Bake until topping is golden. Let stand a few minutes before serving.
If you're not crazy about brie, substitute gruyere or sharp cheddar.

SUPER EASY with minimal ingredients !!!
Cook whatever pasta you want and stir in one to three(depending upon how saucy you want) cans of "Frito's" cheddar cheese sauce. Add some salt and pepper, taste, adjust seasonings, and eat ! You can add some shredded cheese of your choice too... any flavor you like !!
I take this canned cheese dip on trips to Europe and make it for everyone I visit... they love it!!!
I always have a can or two on hand for an emergency "mac & cheese" attack !! : )

The ladys cheese and mac

Fried mac and cheese
Peanut oil, for frying
1 recipe "The Lady's Cheesy Mac" prepared, chilled in the refrigerator overnight, and cut into 15 bite-sized squares, recipe follows
Flour, for dredging
1 egg, beaten
Plain bread crumbs, for dredging
Heat 2 inches of oil in a large, heavy Dutch oven to 350 degrees F.
Dredge each Cheesy Mac square in flour, then egg, and then bread crumbs to coat. Fry for about 1 minute on each side until golden brown. Drain on paper towels before serving.
"The Lady's Cheesy Mac":
