The only thing required for an amphibious assault is a craft to get the troops from their transport ship to the beach. Air superiority is only needed if you want the troops to have a good chance at success.

It's not a requirement however if it's available then commander's are going to use air cover. The more troops you can get on the beach safely the better.

Yes it is! landing craft are very vulnerable to air attack once they leave the ships and head to the beach. That is why the marines retain a potent and very well trained and equipped air force of their own. This guarantees air cover when the navy and air forces are bogged down somewhere else.

Why not have them defending planes go a bit over seas and destroy invaders before they reach the beach, or land?

As for the invaders them selves, aerial superiority could ensure that the beaches are a bit safer before they intiate the GO GO GO towards the beaches.

Not necessarily. While having it gives good cover to your landing troops, you can cover them just as well with some warships.
