I work at a pharmaceutical company and we store drugs in stainless steel containers for years. They are autoinjector style cartridges and the drugs inside are very sensitive and cannot be compromised by anything. So if its good enough to hold drugs meant to be injected straight from the stainless tube for years, stainless steel should suffice with any sauce.

mamia stores her sicilain sugu (spag sauce) in a steel pot in refrig overnight. and we have been fine all these years. in fact, it's actually a bit warm in the morning.

depends on the sauce.
some foods interact with the metal which can destroy the taste, such as tomato based sauces, pineapple based sauces.
To be safe, store sauces in plastic.

as long as its just over night ... no longer than that ... the acid in the sauce (assuming its tomato) will start to deteriorate the pot.

"Chef" Bob is wrong, stainless steel is fine, it is what is used in Restaurant kitchens.
