SUGAR COOKIES ~ especially for decorating / doubles easily
1. Butter or hard margarine, 6 tbsp. 100mL
softened ( at room temp)
Granulated sugar 1/2 cup 125mL
Large egg 1 1
Vanilla flavoring 1/2 tsp. 2 mL
2. All-purpose flour 11/4 cup 300mL
Baking powder 3/4tsp. 4 mL
Salt 1/4tsp. 1mL
Cardamom (optional but good) 1/8 tsp. 0.5 mL
3. Granulated sugar, sprinkle
YOU WILL NEED: a small bowl, measuring spoons and cups, electric mixer, rubber spatula, rolling pin, cookie sheets, cookie cutter, pancake lifter, oven mitts,waxed paper and a wire rack.
1. Put the first 4 ingredients into bowl. Beat on medium speed until smooth.
2. Add the flour, baking powder, salt and cardamom. Beat on the lowest speed just until moistened. Cover the dough and chill in refrigerator,2 hrs or overnight. Turn oven to 350*F. Grease cookie sheets. Remove dough from refrigerator. Roll the dough, a handful at a time, on a lightly floured surface to about 1/8 inch (3mm) thick. Use favorite cookie cutters to cut out shapes. Arrange the cut out cookies on the cookies sheets.
3. Sprinkle cookies with sugar unless you plan to glaze or decorate. Bake on the center rack in oven for about 10 minutes. Use oven mitts to remove cookie sheets to wire rack. Let stand 2 minutes. Remove cookies to waxed paper on counter and cool completely. Decorate if you like. Store in container with lid. Makes about 3 dozen cookies.

Recipe Ingredients:
1 c. butter, softened

1/2 tsp. almond extract
Cream the butter and sugar in a large mixing bowl. Beat in the eggs, almond extract and vanilla until fluffy. In a separate bowl, combine the flour and baking powder. Stir into the bowl with the creamed butter and sugar.
Cover the cookie dough in plastic wrap or waxed paper and refrigerate for 6 hours. Roll out the dough with a flour-coated rolling pin to 1/4" thickness on a floured surface. Cut out the cookies with cookie cutters. Decorate. Baked on un-greased cookie sheets for 10-12 minutes at 375 degrees until lightly browned.

Frosted Cookie-Cutter Sugar Cookies - Perfect to make shaped, decorated cookies for Christmas, Easter, Halloween, and any season or holiday.
Yield: about 36 cookies
Prep. Time: 0:25
3/4 cup butter-flavored shortening
1 cup granulated sugar
2 eggs
4 Tbls. milk - divided
2 tsp. vanilla extract - divided
2 1/2 cups all-purpose flour
1 tsp. baking powder
1 tsp. salt
1 Tbls. butter
2 1/2 cups powdered sugar
food coloring
-In a large bowl, cream together the shortening and sugar until smooth.
-Beat in eggs one at a time.
-Stir in 1 Tbls. milk and 1 tsp. vanilla.
-Combine flour, baking powder, and salt; stir into creamed mixture.
-Cover dough and chill for at least 1 hour.
-On a lightly floured surface, roll out the dough to 1/4" thick.
-Cut into desired shapes with cookie cutters.
-Place cookies 1 1/2" apart on lightly greased cookie sheets.
-Bake in a 400 degree oven for 6-8 minutes.
-Remove cookies from cookie sheet and cool on wire racks.
-In a small bowl, beat butter, 1 tsp. vanilla, and powdered sugar until smooth.
-Stir in remaining milk, 1 Tbls. at a time, until mixture is a good spreading consistency.
-Stir in food coloring.
-Decorate cooled cookies with icing.
